There Is More To Italian Cheeses Than You Think

There are over four hundred types of Italian cheeses. Unfortunately, most of the rest of the world only thinks three or four types of cheeses when they think of Italy.

The four cheeses with which we are most familiar include those used in pizza, those sprinkled onto spaghetti, those used in sandwiches and the ones used in lasagna. The four cheeses we most associate with Italy include mozzarella, provolone, Parmesan and ricotta.

In addition to the limited numbers of Italian cheeses we do eat, what we often find in the grocery store is nothing like the cheeses of Italy.

It may come as a surprise to you that the mozzarella that we often eat has no resemblance to Italian mozzarella. In Italy, mozzarella is made from the milk of the water buffalo. It is a fresh cheese that should be consumed within a few days of preparation. It does not have the long shelf life of the mozzarella we use that is made from cows milk. A lightly salted slice of fresh mozzarella is said to be a great complement to freshly baked bread. A common salad is made by combining slices of mozzarella with slices of tomatoes and dressing with basil and olive oil.

Of course it does not take a genius to recognize that the dried stuff in a shaker can is nowhere near the parmesan cheese of Italy. There parmigiano is prepared, pressed into cheese cloth and allowed to ripen for a full two years before being freshly grated and served.

Italian provolone is a table cheese. Provolone is made from whole cows milk and is aged for four months or longer. It is traditionally in the shape of a pear.

Another fresh cheese is ricotta. This cheese is easily made and dated back to Roman times. Made for whole milk, the cheese is sweet and often used in preparing deserts. If you want a real ricotta experience rather then watery, sour, part-skim ricotta sold by your grocer, try making your own. You will need cream, whole milk, salt and lemon juice. The first three ingredients are boiled together and the lemon juice is added to cause the mixture to curdle. The ricotta is allowed to drain through cheese cloth for about ah hour and drained until firm. Use the finished product within the next couple of days.

Italians buy their dairy products at a dairy store. Some of these stores make their own cheeses. This means that the fresh cheesed you purchase today may have been made today in a very old tradition.

Do not forget that there are many types of Italian cheeses available today. For some, you may have to travel to the village where the cheese is made to experience it. Italy makes a very good blue cheese that is great melted in butter with garlic over pasta.

Sirloin is a term referring to steak that comes from the lower part of the beef ribs, continuing from the prized tenderloin. Sirloin is considered a high quality, flavorful cut, but can be tougher than the most prized steaks. The sirloin itself is divided into many different types of steak.

Out of these types, the top sirloin is the most prized. You are unlikely to get it unless you specifically look for it, since most sirloin steak is actually bottom sirloin. Less tender and much larger, this is more common and less expensive. The bottom sirloin is connected to the part of the animal called the sirloin tip roast. This is a good roast, but is often somewhat tough, so do not try to eat it as a steak.

Tri-tip steak is a strongly flavored part of the bottom sirloin, and is very lean, causing it to overcook if not paid proper attention. Sirloin pin bone steak is one that is cut from the front part of the sirloin. There is an oval pin bone inside that gives it its name. Sirloin flat bone steaks have flat back and hipbone pieces inside, as well.

Let's Cook Chicken

My favorite thing to do with honey that you might not thing of is to use it in a chicken marinade. I combine two tablespoons of honey, four tablespoons of soy sauce, half a teaspoon grated ginger, a half teaspoon minced garlic and a dash of cayenne pepper in a sealable plastic bag. I mix it up well then toss in boneless skinless chicken breasts.

If you like the item to be free of salt, just substitute soybean sauce with cider vinegar or employ soy sauce that contains low amount of sodium. I keep it in the refrigerator for approximately one hour before placing it on the grill. I prefer to perform this with the George Foreman grill, but, you can grill it on the oven if you like. I notice that the murky savor from the grill really goes well with this drench.

The secret to this recipe for Chinese Chicken is Rum. Many Chinese restaurants use a similar recipe for both Chicken and Shrimp.

Scrumptious! You'll need 1 large boneless, skinless chicken breast per person. Rinse, dry, and slice into quarter inch wide pieces. Next get together your favorite stir fry vegetables. I like to use carrots, broccoli, water chestnuts, bamboo, snap peas, and snow peas, but you can use whatever vegetables you like best.

The vegetables you use can be of any type - these may be precut or frozen or you may go for fresh vegetables like carrot, broccoli etc or you may choose canned things like water chestnut, bamboo etc. The vegetable to be used are to be cut into identical pieces. If you are using canned items, wash them well. Then stir fry them. Next part is more enjoyable and for that you have to use some garlic and some peanut oil. Of course you have to avoid peanut oil, if nuts cause allergy to you.

Coat the chicken strips with a combination of flour and any spices of your choice. Add a small amount of corn, canola, or olive oil to a wok or fry pan, coating the bottom and sides.

Heat up 2 tablespoons of oil in your pan and then add the chicken strips. Keep an eye on them - you want to brown all sides evenly and lightly, and this does not take long! Once you've done that, use a slotted spoon to lift the chicken out of the pan and into a paper-lined bowl. Set that aside for a while. Then saute 3 cloves of finely chopped garlic in your pan, being careful not to burn it.

As soon as the garlic is sauteed, add your vegetables and saute them. Do not allow them to get too well done but any firm vegetables like the broccoli or carrot should be fork-soft. At this point, add back your chicken strips and lower the heat. Now comes the fun part. Add 2-3 tablespoons each of soy sauce, garlic infused rice wine vinegar and some fresh shredded ginger root (about 1 inch peeled and chopped finely).

Add 3 to 4 tablespoons of warm water also, put the top on it, cook on low heat for approximately 5 minutes; stir at regular intervals to prevent burning. Use salt and pepper to season according to your preferences. Just before serving, put approximately 1/4 cup of the highest quality unflavored rum you have. Stir regularly to prevent a flare.

One of the best and easiest ways to cook chicken is in a crockpot. There are hundreds of different recipes for chicken using a crockpot. You can use any, or all, parts of the chicken. You can even use a whole chicken. The best part of cooking with a crockpot is that you put your ingredients in, cover, and come back hours later. Just add salad, maybe some rice or potato, and dinner is ready!

Add your choice of vegetables to the chicken, pour in one can, or about 14 ounces, of chicken broth, cover and simmer for 8 hours, or until chicken is tender. This can be done in a covered pan on top of the stove but a crockpot is usually easier.

Most nutritionists suggest that pregnant women beware of certain foods, while completely steering clear of others. A lot of this is general knowledge, but when you delve into the exact details, the fine print as it were, it can get rather confusing. It becomes difficult to decipher what's actually bad for you.

Family members are eager to dish out advice. Strangers even will offer you their supposed tried and true tips when it comes to diet and babies and giving birth, etc. All this often unsolicited information can be frustrating and confusing all at once. They are also harder to mark on the surface. This can be great if you are someone who does not want to have to worry about resurfacing and conditioning your board any more than is necessary.

If you want to incorporate butchers block on a budget, consider edge grain blocks. These are less expensive than end grain but they are not as durable and may not be desirable to serious cooks. Consider trying a separate block first to see if you like how you care for your block.

Think about the use you will be putting your block through. If you love the look of natural wood and want a lot of work space where you can cut food, consider using butcher block as a counter top. If you love the look of stone but you want to have some ability to use butchers block, think about an island or a separate board.
