In small bowl, whisk together the mustard, lemon juice, and some of the reserved oil from the artichoke hearts to make a dressing. Slice the chicken breasts. Serving Idea: To serve this chicken recipe, place asparagus spears on each serving plate. Place the sliced chicken on the asparagus then spoon the Dijon dressing over the chicken and finally top with the artichoke mixture. Serve with warm, cooked brown rice or noodles.

Chicken with Okra and Tomatoes: You will need, 2 cups cooked chicken (cubed), 1 (14.5 oz) can stewed tomatoes (Italian style), 1 cup frozen sliced okra, 1 cup zucchini (half-moon slices), 1/4 cup red onion (medium dice), and lemon juice ( to taste). Cook chicken as desired and cube. Place the stewed tomatoes with the juice in a medium saucepan. Break up the tomato pieces a little so they are more bite-sized. Add the okra, zucchini and onion to the pan and enough water or vegetable broth to bring the liquid level up to the level of all the ingredients. Simmer over medium-low heat for about 15 minutes or until the zucchini is tender and the okra is warmed through. Stir occasionally. Add the cubed chicken and allow to cook a few more minutes to warm the chicken. Turn off the heat and add the lemon juice and salt and pepper to taste. Serving Idea: Serve over a bed of warm, cooked rice, pasta, or noodles with a small side salad of mixed salad greens tossed in a red wine vinaigrette.

Chicken Salad with Apples and Ginger: You will need, 2 cups cooked chicken (cubed), 1 apple (cored and diced), 1/4 cup chopped walnuts, 1 tsp grated ginger, 1/2 cup low-fat sour cream, baby spinach leaves, and 4 red potatoes. Combine the chicken, apple, walnuts, ginger, and sour cream in a bowl and toss well. I have always been a big fan of the Star Trek Series. I like the idea of Traveling to unknown places meeting new people. Having great adventures and hooking up with lots of Chicks! Sounds like a familiar lifestyle huh?

I remember reading one of the Star Trek novels years ago. Captain Kirk and the crew of the Enterprise were sent to see if they could end a war that had been going on for hundred years between two planets. Star fleet told Kirk and Crew, if these two planets did not stop fighting, within ten years both planets would destroy themselves. This is kind of how I remember the story.

As the Enterprise crew studied the two planets it seemed they had nothing in common at all. The races looked nothing alike, their religions were far apart, and their economy and Government structure were completely different. The Crew searched and searched but it seemed they could find no common ground between the two planets in all their files.

When Kirk reached the planets, he held a meeting onboard the Enterprise. Delegates from both worlds attended the meeting. After only a few minutes, the Delegate's from the two planets where arguing fiercely and Kirk had to call an end the meeting.

While the Enterprises Crew kept looking for something in common between these two Worlds, Kirk set up two private meetings with the leaders of the two planets. While having dinner with the first planets leader, Kirk found him to be very smart and personable. He enjoyed his company. He then set up a meeting for Lunch with the Leaders of the Second Planet. Again He found this race to be very intelligent and easy to get along with.

Kirk could not understand how these two different planets, which were both so smart and friendly, could not get along. There had to be a way to get them to just start talking to each other. Kirk set up another meeting for the next day between these two worlds to try once more to try to get them to talk with each other.

Kirk spent all night pacing and thinking. "There has to be something they have in common", he thought. As the meeting was only a few hours away, Kirk sat down to rest. As Kirk was relaxing he thought, "I haven't eaten in hours I'm starved". He started thinking of the meals he had with the two alien races. He had enjoyed both meals. The main dishes had both reminded him of corn and having grown up in Iowa, corn was something Kirk knew. Corn? Wait Kirk thought, calling one of his Ensigns and telling him to get him the Menus from both meals. After reviewing the meals and the ingredients, he soon realized that the same corn like plant grew on both planets.

With only a short time left, Kirk ordered dishes made from both planets that included the plant. When the Leaders and delegates from both worlds arrived, they were told please no talking, they would all eat first. Both groups enjoyed the meal. When the leader of one of the planets asked Kirk about one of the dishes made from the corn like plant, Kirk told him he would have to ask the Leader of the second planet as it was one of their dishes. As one of the leaders of the Second planet explained how it was made, other members of the groups started talking about how they grew the plants and recipes that had been handed down in their families over the years.

This was the common ground Kirk had been looking for. Within a few hours, the planets had agreed to a cease fire and by the end of the week the planets had stopped fighting and declared peace. It took many years for some to get over their hatred of each other and things did not go completely smooth. Within 5 years the planets had started trading with each other and both worlds grew Stronger. 20 years after the truce both planets where invaded by a far off race, but because both planets had put aside their differences and collaborated in many different areas, including defense, they were able to fight off the invaders.

If Captain Kirk were a Biker and a member of a group like NCOMC and he was sitting down with the leaders of all the Major Motorcycle Clubs in the world, how long would it take him to find a common ground between the groups? I wonder if he could get them to talk and realize it was in their best interest to get along, to work together.

Motorcycle Clubs already have an invading force looking to take them down. Will the groups keep fighting each other, making themselves weaker as this force works to end them all forever or will a Captain Kirk arise to Unite them?

You've heard about cooking ahead for the freezer before. You're convinced the technique will save you money. So, now you're ready to give cooking for the freezer a try. That's great! But what on earth do you store all this good food in so your hard earned money doesn't go to waste? You certainly don't want to have your food suffer from a bad case of freezer burn... and you also don't want to break your budget stocking up on expensive freezer boxes. Oh, what's a Freezer Mama to do? I want to assure you that you don't need to hold a party and buy expensive plastic boxes. Any food grade plastic will work. The inexpensive plastic boxes at the grocery store function just fine, but make sure you have storage items with tight fitting, air-tight lids.

As time progressed, I kept seeing David introducing foods that were from all over the world. Some he called "superfoods" which was the first time I began hearing that word. Over the last three years, I have seen more and more reference to "superfoods" - both pros and cons. Plus including a lot of our traditional foods in this category. I fell into this same hole, logically associating superfoods with the dictionary definitions of both "super" and "food." When I realized this wasn't making sense, I went looking to see what David Wolfe had to say.

There's a definition of sorts in David Wolfe's book called "Superfoods" and as I read it, all the confusion about this subject fell away. "Superfoods comprise a specific set of edible, incredibly nutritious plants that are not entirely classifiable as foods nor are they entirely classifiable as medicines (such as herbs)." Reference "Superfoods" by David Wolfe To fully grasp this, I highly recommend you get the book so as to get the full idea of what David is saying here.

So, Why Eat Superfoods? When you look at superfoods as a whole new class of edible items (different from traditional foods and herbs), what are they good for? I have found a way to replace most of the multitude of vitamin and mineral tablets I began adding to every meal 40 years ago. When I began integrating superfoods into my diet, I found that I no longer needed to take so many vitamin pills and other supplements in pill or tablet form. What a relief! Hemp Seed is one such superfood. I began taking hemp seed a few years ago as I was looking for a natural source of Vitamin E. The hemp seed is rich in Vitamin E and Omega Fatty Acids, and so much more. This item is listed as a superfood in David's book.

Aloe Vera is another superfood I take. I was looking for something to normalize my digestive system. Since I am over 60, my various organs need more support. I really was unable to make any significant difference with traditional foods or supplements. When I found I could buy the whole leaf of the aloe, and have it shipped to me, I tried it. The aloe is known to help nourish the liver and pancreas as well as other vital organs. I have found it to be an all-around whole-body food.

You can also make your own freezer pans by lining a casserole dish with foil. Put the food in on top of the foil, freeze the meal until it's solid, and then remove the foil and food from the pan. Finish wrapping the meal and put it back in the freezer. Great Wholesome Holiday Meals For the Family

Although not for breakfast, below are a few wholesome healthy recipes and holiday meal ideas for the family.

1. Smoked Turkey Breast with Collard Greens: Ingredients include: 1.5 pounds collard greens, pound smoked turkey breast, cup chicken broth, minced onion, tsp. red pepper flakes, tsp. minced celery, and tsp. ground black pepper. Place the cut up pieces of collard greens and turkey in a pot. Cover them with water and cook on medium heat, covered, for 20 minutes. Add the onion, celery, red pepper flakes, chicken broth, onion, red pepper flakes, and black pepper, and cook on medium heat for approximately an hour.

2. Peppercorn Honey Mustard Pork Roast: Ingredients include: 1- pound pork loin roast, 1 orange, a 12-oz package of cranberries, 1/4 cup honey, 2 tbsp. honey mustard, 2 tbsp. crushed peppercorns, 1/2 tsp. 1 tsp. minced thyme, and 1/2 tsp. salt. Chop up orange and cranberries. Place in saucepan and blend in honey. Bring to a boil over medium-high heat and cook 3 to 4 minutes. Cool. Place the pork around the roast in a roast cooking pot. Mix the honey mixture and other ingredients in a bowl. Baste the roast and pork with the sauce. Cook at 325 degrees for 30 minutes. Remove and baste the meat. Cook for another 20 minutes. Let it sit for about 15 minutes and then serve.

3. Honey Mustard Glazed Turkey: Ingredients include: 5 pound turkey breast , 1/4 cup apricot preserves, 1 tbsp. honey-style mustard. Place turkey breast in roast pan. Bake for 2 hours at 325 degrees. In a bowl, blend the mustard and apricot preserves. Baste the glaze over the turkey breast and cook for another 20 min. Remove and serve.

4. Rib Eye Roast with Gravy, Potatoes, and Mushrooms: 1 tbsp minced rosemary, 2 minced garlic gloves, 2 tsp salt, 1 tsp ground black pepper, one 4-pound rib eye roast, 4 pounds small potatoes (cut in small portions), 1 tbsp vegetable oil, 1 pound chopped white mushrooms, 1 tbsp butter, 1 tbsp all-purpose flour, 1 can beef broth, and 1 tbsp tomato paste. In a bowl, mix rosemary, garlic, and salt and pepper. Baste the roast. Cook for 40 minutes at 350F (175C). Add potatoes to the roast pan. Cook for another 20 minutes. Put mushrooms in the roast pan, swirl, and cook for another 40 minutes. Mix butter and flour together in a bowl. Remove roast and vegetables from oven. Remove food from the pan. Add beef broth to the pan juices, boil, and cook for 2 minutes. Reduce the heat and mix in flour mixture and tomato paste, and blend. Pour the gravy in a bowl. Slice beef and serve with gravy, potatoes and gravy.

Think of savory soups or stews, cooked long and slow at home. Then casseroles, big pots of baked beans, chili and cabbage rolls. These are often made on the stove top or in the oven. Then in 1971, the Crock Pot by Rival came onto the marketplace and expanded the possibilities in home cooking. Today, the generic term slow cooker is used alongside the brand name Crock Pot. The various modern models are the busy home cook's friend. Many classic comfort foods are also slow cooker classics, easy to make and easy to serve in bowls to warm family and friends snowy winter evenings. The original Crock Pot was an innovation at that time. I remember when these came out, and they were as hot as any modern, small kitchen appliances you see advertised now.

The crock-pot is a perfect solution to this problem. Pull yours out of the cabinet (once you've started using it you may realize you want a couple of them, I can have a 3-course meal going in the crock-pot for my family of 6!) All you need to do to get your slow cooker ready to go is a good recipe (you can find tons of great ones online). Then you get your meat and vegetables ready, throw them into the crock-pot, add spices and liquids and you're done. You put the crock on the setting the recipe instructs and then you can literally forget it. Go about your day and don't worry about supper-time. Your meal will be ready when you are!

If your hob or hotplate has front and back burners or elements then always use the back ones when you can and turn the saucepan handles away from the front. This prevents children, pets or yourself from getting burned by brushing against or knocking over a hot cooking utensil. Never leave hot items like spoons or ladles near the edge of the work surface where a child or pet could reach them.

Do not cook while wearing artificial nails. If you are handling hot food and pans they can get hot and melt while still attached to your fingers. This can give you a nasty burn. Tell your children that cannot touch the oven door. Only touch the oven door yourself by using the handle and always use oven gloves or a towel. Having an eye level oven is a good idea. Not only is it easier to use but it also keeps the hot door out of reach of small children.

If you have long hair do not just tie it back in the kitchen. Tie it up in a bun or wear a hat. The same goes with clothing. Roll up your sleeves if they are long to keep them from catching on fire from a hot surface.

Easy Recipes That Can Feed A Family

Place the chicken in a casserole dish. Lightly add pepper and paprika over the chicken. Mix the other ingredients in a bowl and pour over the chicken. Bake the chicken covered at 350F for approximately an hour.

Tasty Tacos: Ingredients: 1 pound lean ground beef, 1 ounce taco seasoning packet, 2/3 cup water, one can of kidney beans, 1/3 cup light sour cream, 1/3 cup medium salsa, 4 cups shredded iceberg lettuce, 2 cups chopped tomatoes, 1 cup grated cheddar cheese, and flour tortillas. In a frying pan, cook the lean ground beef until crumbly. Drain the fat. Add taco seasoning packet, 2/3-cup water, and beans to the meat. Mix everything together and cook. Reduce heat and let simmer for about 5 minutes. Stir as it simmers. Remove from heat and let it cool while covered. Divide all of the lettuce, tomatoes, cheese, salsa, and sour cream in separate small bowls. Set aside and let it cool a bit. Add sour cream and salsa to a small bowl and mix until well blended. Warm the tortillas shells in the oven or microwave. Place the meat filling in the tortilla shell. Allow each member of the family to add their choice of vegetable toppings.

Hamburger Pizza Pie: Ingredients: 1 pound of lean ground beef, 2 packets of pizza dough mix, 1 can spicy pizza sauce, 1 pound of mozzarella cheese. Brown the ground beef in a frying pan until crumbly. Drain the fat. Follow the directions of the dough packet mixture to make the crust. Grease the bottom and sides of a pizza pan. Press the pizza dough into the pan, including the sides to make a thicker crust. Sprinkle flour on your hands to keep the dough from sticking to fingers and hands when you press it for the crust. Add a layer of the spicy pizza sauce over the crust. Add of the ground beef to the bottom of the pan. Cover the top with grated Parmesan cheese. Repeat the process to have another layer. Sprinkle the top of the pizza with mozzarella cheese. Bake at 350-degrees for approximately 20 minutes and the crust is brown. Remove from the oven and let it sit for a few minutes before cutting and serving.

Heat a griddle or frying pan and place a small amount of vegetable oil on it. Scoop out some of the pancake batter with a ladle and place it on the griddle. Brown on one side and when you see bubbles start to gather all around the edge of the pancake flip it over with a pancake turner or spatula and let it brown on the other side. When you see bubbles forming around the edges again the pancake is done and can be removed from the pan and buttered. Serve with syrup.

You can alter this recipe a bit to give it a little more flavor. To make a buttermilk pancake use the same amount of buttermilk as you did regular milk. Grate the rind of a whole orange and add it to the recipe and instead of milk use orange juice for an orange flavored pancake. Add one teaspoon almond flavoring to make an almond pancake. Take three fourths cup of washed whole blueberries and add to the batter for blueberry pancakes. If you would rather have strawberry pancakes you can slice three fourths of a cup of strawberries and add them instead. If you really want something sweet and fun add one half of a cup of chocolate chips at the end when everything is mixed up. Serve chocolate chip pancakes with whipped cream instead of syrup.

If you want to try something different you can make chocolate pancakes. They are unusual and very delicious. They should probably be served as a dessert instead of at breakfast. In a bowl combine two cups of flour, three teaspoons baking powder, and one fourth teaspoon salt. Mix these items together and add three fourths cup of white sugar and mix in. Add one cup of milk and four teaspoons of butter. Mix in well and then add two eggs and mix well. Finally add six teaspoons of powdered cocoa and mix well.

Using a ladle put batter on hot skillet with a little vegetable oil. When bubbles form around the edges flip it over and remove when the bubbles start to appear again. Spread with a little butter and place several dollops of whipped cream over top to eat. You can also sprinkle some chocolate chips on top and let them melt a little.
